COOKING INGREDIENTS:
1) 4 large cuts of smoked catfish
2) 3 medium onions
3) 4 tbsp of tomato paste
4) 2 bay leaves
5) 2 cups oil
6) 3 gloves garlic
7) 2 carrots
9) 1 large tomato
10) 1 medium cassava
11) 1/2 small cabbage
12) Salt and pepper to taste
COOKING METHOD:
1) Wash Catfish thoroughly with hot water and lime.
2) Blend onions and chopped tomatoes.
3) Fry blended onion mixture with tomato paste for 5 minutes.
4) Then add 5 cups of water and seasonings.
5) Insert Catfish and vegetables and bring to boil.
6) When almost cooked, reduce heat and re-season to taste.
7) Cover partly with lid and leave to simmer slowly. Serve with
plain, boiled rice.
